Store bought ice creams and ice lollies are often loaded with sugar and consuming them often give me that feeling of guilt, so I decided to make them at home this summer.

Homemade popsicles were in my to do list for long and I finally bought myself a popsicle mould last week J. When the kids saw the moulds they got super excited and asked me to make few for them so together we made citrus ice lollies and it was so much fun, their happiness had no limits.I guess now no more buying them from store. I’ll be making them more often now and you will find my little space out here will have more of frozen treats this summer.
With temperature in my part of the world is soaring to as high as 38 degrees C and it is only March, freezing your favorite liquid is actually a great thing to beat the heat and cool oneself. You can freeze anything of your choice. Now watermelon + basil syrup + white rum sounded like a good plan.
Making my own popsicles is pretty simple thing you just need to decide upon the flavors and freeze them. Once frozen sit back and enjoy like I’m doing while writing this blog post. The Watermelon popsicles that I’m talking about here actually happened by chance, I had that watermelon lying on the kitchen counter and was thinking of juicing it or maybe making a mojito but then that idea of making a mojito popsicle stuck, the watermelon was destined to become a popsicle. Now watermelon + basil syrup + white rum sounded like a good game plan. So instead of blending everything together I made a syrup with basil to sweeten the pops. So the result was a spiked one for the VK & me and virgin one for kids. For us it was like having our cocktail in frozen form.
The delicious and refreshing popsicles are bursting with flavors of watermelon with just the right amount of sweetness from basil syrup. The flavor from basil syrup blends so well with the watermelon juice and the addition of white rum makes it a class apart and that color is simply so beautiful. When the popsicle are actually freezing you will see the liquid seem to separate out giving it a beautiful lighter and darker effect. Don’t be tempted to give it a mix that effect will look beautiful upon freezing.
The best part about these popsicles are they you can enjoy them without thinking much about calories. Your favorite fruit in frozen form is enjoyed not only by kids but by adults as well. You will not believe that I had 3 popsicles when I hardly eat ice cream or anything frozen, they are just so refreshing and very addictive. Crazy summer sun and these delicious popsicles what else you need.
The recipe for Watermelon Mojito is strictly for adults but you can always leave out the alcohol part if you wish to enjoy a virgin one. Take a blender and place all the ingredients, cover and blend on high till smooth.

Pour into popsicle moulds and allow to freeze for an hour to just start setting.

Take out of the freezer and cover with a foil and insert a wooden ice cream stick in the centre of the mould. The foil will ensure the ice cream stick stays in its place.

Freeze for 8 hours or overnight for the popsicle to completely set in. Place the popsicle moulds in warm water for a few seconds, this helps release the popsicles.
