Oatmeal Blueberry Cookies

Oatmeal Blueberry Cookies are crisp on the outside yet moist soft on the inside. These delicious thick and chewy cookies have become my favorite mid morning snack.

Past few weeks have been baking and a lot of baking, I am feeling flour and sugar all over me. Kids have started demanding a lot of cookies and cakes these days loaded with icing which of course is not good after too much indulgence. Yes I have been baking healthy too and now that I have become a little more health conscious. 
Mornings are usually the busiest time of the day at my house with hardly any time for lavish breakfast, there are a few day when it get difficult to find time for breakfast. Talking about healthy eating oats is one of our favorite breakfast option, kids like theirs plain but for us I usually add some nuts and fresh fruits. Oats in a form of cookies was always on my mind since long as they can always be a perfect grab and go kind of breakfast. These have become my favorite as mid morning snack.
These cookies are thick and chewy and full of flavor just the way I like my cookies. Here I’ve used blue berries and chocolate chunks as I’m not a great fan of raisins. Blueberries give unique sweetness to the cookies and you can feel nutty flavor from the oats in every bite of the cookie and chocolate in cookies are always win win. That hint of spice from cinnamon maximizes the flavor and brown sugar provides great depth to the cookies. These cookies are so beautifully crisp on the edges and wonderfully soft and chewy. I wanted my cookies to be thick hence I chilled my dough for about 30 minutes, here in my case I had to bake a little longer than the usual baking time as the cookies were thick. Chilling the dough will not make your cookies flat rather they will be on a thicker side. You can straight away bake these cookies if you like your cookies flat.

Recipe for Oatmeal Blueberry Cookies
Ingredients
·        105 grams all purpose flour
·        170 grams unsalted butter at room temperature
·         1 cup packed light brown sugar
·        3 cups of oats
·        1 large egg
·        ½ tsp baking soda
·        ½ tsp salt
·        ½ tsp cinnamon
·        1 tsp vanilla extract
·        1 cup mix of blue berries and chocolate chunks
Instructions
·       Take a large bowl and using a hand mixer beat the butter till creamy for about a minute. Add sugar and beat the butter and sugar for about 2 minutes till the mixture is smooth and creamy.  Now add egg and vanilla extract and beat till well combined.
·        In another bowl add the flour, baking soda, salt and cinnamon, whisk well to combine.
·  Now add the dry ingredients into the wet ingredients and beat until the mixture is well incorporated. Stir in oats & blueberry chocolate chunk mix. Refrigerate for about 30 minutes.
·        Preheat the oven to 180 degrees C. Line a baking sheet with parchment paper.
·        Scoop out 1 tbsp chilled dough using an icecream scoop on the baking tray. Place the  and dough scoops 2 inches apart and press slightly on top. Bake for 15 minutes or until lightly golden brown on the edges, the centre would remain soft. Remove from the oven and let the cookies cool on the baking tray for about a minute before transferring to a wire rack to cool completely.
