That time of the year is here again, that chill in the air and your warm beautiful jackets make you cozy…isn’t it?? This certainly is telling that Christmas is here knocking at the door. I am so excited as this is one of my favorite festival and this means a lot of baking will happen. Since Thanksgiving I had been baking a lot of cakes for family and friends, now Christmas is approaching cookies had to be on my baking list. It was then I had started looking for Christmas Cookies recipes, was not keen on baking regular chocolate chip cookies. My search stopped the moment I looked at these gorgeous red colored beauties and found this perfect recipe on Sallys bake blog.
I am glad that I decided to bake these, they came out just perfect as I had thought. Perfect crispy on the outside and cakey on the inside and that beautiful flavor of the chocolate made it to die for and that beautiful red color make for a beautiful edible gift. Furthermore to make it even more killer I has stuffed Nutella in them and yes these are definitely what you want right now. Can you believe I have already made two batches of these so so delicious cookies and all gone in no time. VK even rated these as very very close to the ones he had at coffee shop in a five star hotel, wow am ecstatic.

Red Velvet Cookies are not like any other regular cookie, they are like having cake in form of a cookie as I had said they are crisp on the out and cakey on the inside. One important thing to remember here to chill the dough for minimum 1 hour or 5 – 6 hours as I did, chilling would prevent the cookie from spreading too much. So friends chilling the dough is a very important part here. That aroma of freshly baked cookies fills your senses with joy. 
 
We have been enjoying these cookies like crazy with our coffee, green tea. I am not much of a cookie person but these are impossible to resist. We have already finishes two batches, wow. Do it excite you, so get up and bake these delicious cookies and I’m sure you will not be disappointed. Enjoy these with for family, friends and these also make gorgeous Christmas gift.
Recipe for Red Velvet Cookies
Ingredients
·        198 grams all purpose flour
·        20 grams unsweetened cocoa powder
·        50 grams granulated white sugar
·        150 grams light brown sugar
·        110 grams unsalted butter at room temperature
·        9 tsp nutella for filling
·        1 large egg
·        1 tsp baking soda
·        ¼ tsp salt
·        1 tbsp milk
            2 tsp pure vanilla extract
·        1 tbsp red food color
·        1 cup chocolate chunks
Instructions
·        Take a medium sized bowl add all purpose flour, cocoa powder, baking soda, salt. Whisk  well till blended.
·        Take a large bowl, add butter. Now using a handheld mixer beat on high for about a minute till creamy. Add brown sugar and granulated sugar, beat till well combined scraping down the sides and now beat in egg, milk and vanilla extract. Now add in the food color and beat until just combined..
·        Add the dry ingredients into the wet ingredients and beat on slow speed until a soft dough
forms. Now slowly mix in the chocolate chunks. The dough is very sticky at this point.
·        Very important to cover and refrigerate the dough for 2 – 3 hours.
·        While the dough is chilling drop about 18 nos ½ tsp size dollop of nutella on baking paper and freeze.
·     Now preheat the oven at 177 degrees C (350 degrees F). Line the baking sheet with baking paper.
·        Now scoop out 1 & ½ tbsp dough and roll it in a form of a ball now press the ball using
your thumb and place a frozen dollop of nutella, again roll it in a form of a ball using your palm.  Place about 9 balls at a time on the baking sheet pressing a little on the top and bake for about 13 – 14 minutes.
·        Allow to cool on the cookie sheet itself for about 5 minutes before transferring onto a wire
rack. While the cookies are still warm stick on a few chocolate chunks..
·        After 5 minutes transfer onto a wire rack and allow to cool completely before storing it in an
airtight container.
·        Can be stored for a week but it will not last that long they will all soon be gone.
