Nothing says home like the smell of baking.The Oats pumpkin bread is made with roasted pumpkin, pumpkin pie spice and oats. With the holiday season approaching I would love to bake more of these and enjoy at our family picnics or maybe gift wrap them beautifully

It’s time for some baking and why not use those pretty pumpkins lying on the kitchen counter top this time. Imagine a bread with pumpkins, those fragrant fall spices, oats to make make it more healthier. With the bread in the oven and I am writing this post my house is filled with enticing aroma of cinnamon, I’m in food heaven right now. With the thought of baking a pumpkin bread clear in my mind I started looking for a good recipe there were tons available and it difficult to choose one, there were few really good recipes worth trying trust me…at last finally found one. The roasted pumpkin, pumpkin pie spice which I had made some time back, and the use of oats in the bread sounded like a great idea, I tweaked the original recipe according to my preference as I wanted bake with oats and use my pumpkin pie spice. Go ahead and bake J, my instinct told me you will not wrong with this one.

The weather has become beautiful these days, mornings and evenings are quite chilly while bright sun shine and clear blue skies during the day with dried leaves fallen everywhere. How much I am loving this change in the weather it is just so beautiful, the other day I told VK lets take our bbq out and invite friends over and let’s party. Imagine chilly nights, bonfire, delicious food, friends and great conversations, absolutely loving the thought of it.
This lovely weather reminds me of Christmas as I started getting that Christmassy feeling, that beautiful Christmas tree and the gifts we used to get. This is one festival which is close to my heart, I have grown up celebrating this festival…i would love Christmas Carols and would always participate at various events held in school before Christmas. Athena & Arnav too are pretty excited about Santa Claus visiting them and giving gifts, they have started discussing about how and when will Santa come to us. Feeling nostalgic hearing their conversation.
Now coming back to the topic in hand Oats Pumpkin bread, well after short listing a few recipes which started with the bread baking process which is quite simple I must say. The only thing which needs preparations to be done earlier is roasting your pumpkins that takes about 45 – 50 minutes and then we can start with the process. It took me three attempt to get this loaf right as I wanted to bake it with oats, finally at fourth attempt got the recipe right and viola there was this beautiful loaf ready. My house is smelling like heaven right now and yours will oo once you bake it. That smell of the pumpkin pie spice is the best part of this baking process. The bread turned out incredibly moist as I used loads of pumpkin in it and tried making it a little on a healthier side using oats. Here I have not used any butter instead has canola oil in it and to give that perfect balance of flavors to the bread my pumpkin pie spice mix came into the picture which was otherwise lying on the kitchen shelf. The addition of the milk prevents it from becoming dense. Here I tweaked the recipe according to my preference, added some oats flour and that bowl of batter sure gave us some delicious pumpkin bread.
Recipe for Oats Pumpkin Bread.
Ingredients
· 1 & ½ cup all purpose flour
· ¾ th cup rolled oats roasted and ground to flour
· 2 large eggs at room temperature
· 1 & ½ tsp pumpkin pie spice
· 1 & ½ cup roasted pumpkin puree
· ½ tsp salt
· 1 tsp baking soda
· ½ cup canola oil
· 100 grams light brown sugar
· 150 grams granulated sugar
· ½ cup dark chocolate chips
· ½ cup milk at room temperature
Instructions
· Preheat oven to 350 degrees F/ 177 degrees C. Grease a 9 inch loaf tin with some melted butter and flour.
· Take a medium bowl add the oil, granulated sugar, brown sugar whisk well till combined. Add one egg at a time whisk well with each addition. Add the roasted pumpkin puree
and milk to the above and whisk well till combined.

· Next in a large bowl add the all purpose flour, oats flour, baking soda, pumpkin spice mix, salt and stir well to combine all the dry ingredients.
· Now add the wet ingredients to the dry ingredients & gently using a rubber spatula mix all the ingredients together taking care not to over mix, it’s ok if there are lumps. Gently fold in the chocolate chips
· Now pour the prepared batter in greased loaf tin prepared earlier and bake for 55 minutes to 1 hour. Your loaf is done if the skewer inserted comes out with only few moist crumbs.
· Allow to cool in the pan for some time, then remove and allow to cool completely on wire rack. Cut into slices and enjoy.
Note : You can use 1 tsp cinnamon, ¼ tsp ground nutmeg and ¼ tsp ground cloves if you do not have pumpkin pie spice mix.
