Chocolate Pudding with Strawberry Coulis and Whipped Cream

Love is in the air for sure with this sinful dessert.  Chocolate pudding with strawberry coulis and some whipped cream will sweep you off your feat.

 

 
Back to blogging after a long time…how I missed it soooo much. Work kept me busy with hardly any time for anything else. Happy to be doing again what I simply love the mostJ. Valentines around the corner, which means cooking with chocolate is an absolute must. Chocolate…my absolute favorite be it chocolate bars, chocolate cakes, mousse, tarts to name a few.  I can literally live on chocolate. My love for chocolate is well known to everyone within my family, friends. If there is any occasion at home cakes or desserts made of chocolate are served, Athena always says mom why don’t you try any other flavor other than chocolate. Whenever VK makes a trip abroad or my younger sister travels to India from USA, they always gift me loads of chocolates.
 
VK and me started this year on a healthy note with an absolutely no sugar intake resolution which means no brown sugar, chocolate desserts, no wine and no chocolate at allL. How did I manage it??? Well I did and I successfully managed it without sugar and I hope to continue this same…I’m so happy and proud of myself. Well I am having this ridiculously delicious Chocolate pudding after 42 days…yeah I deserve this, don’t I.

The topic of discussion chocolate…what can I make out of it was a big question…a dessert which be loved by all in the family and does not take much of time. After spending some time thinking and penning down a few ideas, it was finally decided that nothing else but Chocolate Pudding has to be it…with strawberries in season…decided to serve the pudding with Strawberry Coulis and some whipped cream. Once the dessert was set, I was pretty scared…will it turn out as I had expected or will it be a total disaster. When the pudding was served the expressions on the faces were priceless. In one word it was simply “YUMMY”, I am soooo very  happy with the end result. The pudding is very easy to make with less cooking time, apart from the time it takes to set…a very smooth, rich, chocolaty, creamy, sinful, amazing, and delicious  pudding that looked gorgeous too.
This Chocolate Pudding took my childhood fairytale days…you remember a house made out of chocolate, cookies, gingerbread, candies and all yummy stuff you can imagine… yes I’m talking about Hansel and Gretel…how I wish I had a house like that. Wake up, wake up dear this is reality and no more a dream…in reality Chocolate pudding made up my day J J
 
 
Hot or cold puddings have always been a part of my childhood, mom used to make them but then I never as a child was big fan of puddings and they were not that fancy those days…but my sisters would love them. Chocolate pudding is relatively very simple to make and barely takes only fifteen from start to finish. The addition of more chocolate lends a more chocolaty flavor to it, the addition of butter give a perfect glaze. I used skimmed milk to cut down on little calories J

This Valentines surprise your family and friends with this delectable dessert. Recipe follows:
For Chocolate Pudding
  • 100 grams of dark chocolate
  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp cornstarch
  • ¼ tsp salt
  • 3 egg yolks
  • 1 cup heavy cream
  • 21/2 cup skimmed milk
  • I teaspoon vanilla extract
  • 1 teaspoon butter
  • ½ cup granulated sugar
  • Whipped cream for garnish
For Strawberry Coulis
  • 2 cups strawberries chopped
  • ¼ cup sugar
  • Juice of half a lime
Method for the pudding
 
1.      Chop the dark chocolate into finely.
2.   In a heatproof bowl, combine together cocoa powder, cornstarch and salt. To this mixture slowly add the cream and whisk till you have a smooth mixture.
3.      Add egg yolks to the above mixture and whisk well.
4.      Next pour the milk into a heavy bottomed pan, add sugar.
Warm the milk over medium heat stirring frequently till the sugar is dissolved completely.
5.      Continue to let it simmer over medium heat bubbles form around the edges of the pan.
6.   Pour the hot milk over the cream egg mixture slowly, whisking continuously at the same time till all the milk is fully incorporated and the mixture is well combined. Do not add the entire milk at once as the eggs might scramble.
7.      Add the combined mixture back into the heavy bottomed pan, warm over medium high heat stirring frequently till it comes to a boil. Now the pudding will start to thicken.
8.      Once the pudding starts to thicken whisk it vigorously for 2 min.
9.      Now remove from heat add vanilla, butter and mix well. Now add chopped chocolate, whisk vigorously till the chocolate is fully incorporated into the pudding.
10. Pour into individual ramekins; cover each ramekin with a cling film to prevent a shiny layer from forming on top.
11. Chill in the refrigerator for about 2-3 hours or until set.
12. When set top with some strawberry coulis and refrigerate for about an hour.
13. Serve topped with some whipped cream and chopped walnuts for that added crunch.
 
Method for strawberry coulis
1.      In a medium pan, combine the strawberries, sugar and lemon juice. Bring to boil over medium heat, once it starts to boil take off heat.
Allow to cool a little, once it cools down transfer it to a blender.
2.      Puree until smooth, strain and set aside.
