Brown Butter Blossoms With Salted Caramel

Browned butter blossoms are tender, chewy and melt in mouth topped with salted caramel,nutella and some crushed walnuts. Just perfect for the season!!
Ok, so I just got to know that we are hosting a dinner party over the weekend. Entertaining is a lot of work right from menu planning itself, to grocery shopping to finally cooking. My guests want Indian food, I have a lot of ideas on my mind so I am thing of cooking some lentils maybe Dal Makhani, Butter Chicken, any dish of paneer, vegetables, a rice dish,few kebabs and there are desserts to be made. This is a lot of work but this is what I enjoy doing. Well for now let’s leave this aside and talk about the cookies I made yesterday.
Cookies are everywhere in every possible shapes,flavors and I am kind of loving it. Cookies was never my thing but as they say your preferences change over time and now I love them. I am roll this season and lotsa baking happening in my kitchen. Few days back I had made chocolate thumbprints with mint frosting for Athena’s classmates and they were so good, couldn’t photograph was into lot of things, anyways. So now these cookies I made yesterday are fast disappearing.

These cookies are so flavorful and chewy and here I’ve used brown butter which gives depth in flavor to the cookies. Salted caramel (my favorite sauce), nutella on top works wonders here and that crunch from walnut make it all the more irresistible. Got the perfect recipe for caramel from Sally’s bake blog.  I use salted caramel on any dessert, be it brownies, apple cake, just drizzle it on vanilla ice cream or just eat as, it is just so good.
And the cookie base is basically a shortbread and the cookies here are soft, chewy and salted caramel filled in the indent and topped with nutella and crushed walnuts. Totally irresistible!! One very step making these cookies are chilling the dough for good 2 – 3 hours. No you cannot miss out on this step. Why is chilling important?? It will prevent the cookies from spreading. Next come the salted caramel part, I made my own but you always go ahead and use a store bought. But the caramel recipe that I will share below is seriously good and you must try.

 Brown Butter Blossoms with Salted Caramel
Ingredients for dough
·        1/3 cup granulated sugar
·        1/3 cup light brown sugar
·         ½ cup all purpose flour
·        1 cup butter
·        ½ tsp baking powder
·        ½ tsp baking soda
·        2 tsp pure vanilla extract
·        1 egg
For toppings
·        1/3 cup salted caramel sauce
·        ¼ cup nutella
·        3 tbsp crushed walnuts
Instructions
  •  In a heavy bottomed pan, heat butter over medium heat until melted. Stir the butter continuously until light golden brown in color and taking care not to burn. Remove from heat and set aside to coo
  • In a medium bowl, mix together all purpose flour, baking powder, baking soda, salt and set aside.
  • Add the browned butter while still warm to the bowl of stand mixer with paddle attachment, add the granulated sugar and brown sugar and beat till the mixture is smooth.
  • Add egg and continue beating till incorporated.
  • Add the vanilla and beat.
  • Now slowly add the dry ingredients and continuemixing on medium low till fully incorporated. Take care not to over mix.
  • Wrap the dough in cling wrap and refrigerate for 2 -3 hours.
  • Preheat the oven to 350 F and line two baking sheets with parchment paper.
  •  Now make balls of about 1 inch and place them on baking sheet 2 inches apart and using your thumb make an indent into each cookie. Refrigerate back for about 20 minutes.
  • Bake for 12 minutes. The indents may become less visible after baking so press them with your thumb when out of oven.
  • Allow to cool for 5 minutes on baking sheet before transferring on wire rack to cool completely. 
  • While the cookies are still warm spoon salted caramel onto the cookies and top with nutella and crushed walnuts.

 Ingredients salted
caramel
·        1 cup granulated sugar
·        6 tbsp salted butter cut into cubes @ room temperature
·        ½ cup heavy cream
·        1 tsp sea salt
Instructions
·       In a saucepan melt the sugar over medium heat swirling the pan frequently. The
sugar will form lumps but will slowly melt down into amber color, keep swirling
taking care not to burn the sugar.
·        Once the sugar has melted add the butter and whisk vigorously. The mixture will
begin to bubble as the butter melts, keep whisking.
·        Remove the pan off heat and slowly add the cream, the mixture will bubble rapidly.
·       Whisk till the cream is incorporated. Put it back on heat and allow the mixture to
boil for a minute.
·        Remove from heat add the salt and whisk well.
·        Set aside to cool completely before transferring into a clean jar.
·        Stores well in refrigerator for upto 2 weeks.
