Creamy Avocado Pasta

Creamy Avocado Pasta!!  Very flavorful, super easy and ready in just 20 minutes. Serve it with some charred peppers, cherry tomatoes and get ready
to earn those brownie points.

Off late I have been baking and doing lots of baking…I am so happy that my cakes and other baked goodies come out so well and the praises that I keep on getting just gives me a new high and I am super excited. You remember Arnav’s birthday cake which I recently bake turned out even better than the professional cakes.
 
Now I decided to take a break from baking and play with spices, which has always been my first love. This time I had decided to I wanted to make Avocado toast and got those beautiful avocados and set aside to ripen but realized that I am out off eggs for those gorgeous toasts. Then came in the thought of making guacamole but then no I want to eat Nachos or Fajitas….then how can I use my beautifully ripe avocados. Then decided to use it in pasta, make a pasta sauce out of it, yes. I had seen this post of Avocado Pasta on Instagram, then decided to try and trust me it turned out to be out of the world. The fragrance from basil, tangy taste from garlic and lemon is a sure shot winner. Avocados as you know are very healthy for you.
This pasta is now my new comfort food, its sooo good and be ready to impress you loved ones. All you need is the pasta of your choice, the delicious creamy sauce made of Avocado and you the best thing about this sauce it requires basic ingredients with no cream at all…yes you read it right. Simply cook the pasta, make the sauce and there you have delicious meal ready in just 20 minutes…you can enjoy the pasta as it is since the Avocado sauce is the real hero of the dish or simply add a few veggies for that added flavor like some charred peppers, cherry tomatoes, sautéed green beans, asparagus or even some grilled tofu. Serve up some Garlic Bread or grilled chicken along and there you go baby.  This will sure do wonders to your palate.
While I write this post I am enjoy this creamy pasta again…ohhh how much I am loving this. I had always been skeptical about using avocado in pasta but I am happy and absolutely loving this. The sauce is so good that I licked my bowl clean. I am sure if somebody who does not like Avocado with thoroughly enjoy this sauce and I seriously mean it J

Recipe below:
Ingredients

·        1 large ripe avocado
·        ¼ th  cup fresh basil leaves
·        Freshly squeezed juice of 1 lime
·        3 tbsp extra virgin olive oil
·        5  garlic cloves
·        Salt as per taste
·        Freshly crushed black pepper as per taste
·        A handful of spaghetti per person (for 2)
·        ½ red bell pepper
·        ½ yellow bell pepper
·        5 – 6 cherry tomatoes
·        ½ teaspoon Italian seasoning
·        1 tablespoon freshly grated Parmesan Cheese
Instructions
·        Cook the spaghetti till al dante in a pot of boiling salted water. Once done drain and keep aside.
·     For the Avocado sauce : Take a blender add the avocado, salt, pepper, basil leaves, lemon juice & olive oil, blend till smooth. Adjust the seasoning and your sauce is ready.
·       Take the bell peppers and char them on open flame, peal and thinly slice them. Cut the cherry tomatoes into half.
·       Heat olive oil in a pan and once hot add the sliced peppers, halved cherry tomatoes, Italian seasoning, a little salt. Cook on high heat for a minute. Set aside
·        In a bowl add the pasta, avocado sauce and veggies. Give a good mix.
·        Serve with some grated Parmesan cheese.
