The cuisine of Awadh is one of the most celebrated. The Nawabs of Awadh who were originally inhabitants of Persia may have long gone but they have given some iconic dishes, complex flavors and methods of slow cooking known as Dum. The extensive use of whole spices like Nutmeg, Mace, Cardamon, Kewra, Rose and the exotic Saffron (my favorite aroma in the whole world) is the feature of the Cuisine.
