Grilled Chicken Burger

Grilled Chicken Burger served with some fresh lettuce, olives and cherry tomato salad. A quick and perfect food for weekends or any busy weekday. These delicious burgers are loaded with lots of tender and juicy grilled chicken, cheese, pickled onions, greens, mint mayo, my favorite sauces and some olives. I am not a big fan of burger but this one was yum!!

 
I hardly make burgers as both of us don’t enjoy and these would be the last thing we would want to eat. These burgers just happened instantly… hubby dear is away on a business trip for a month and I was in no mood to cook and kiddos wanted to have their Mac meal for lunch. So it was then I decided to make them at home for them and they got pretty excited that I am cooking them their favorite food. Kids enjoyed their meal with some watermelon juice but can be best enjoyed with some chilled breezer.
 
 
 
Instead of making a regular patties for my burgers, I made them like a sub sandwich using lots of grilled chicken, cheese, lettuce, rucola, pickled onions, olives and my preferred condiments. Rom Grilling is my most favorite way to eat chicken or may be veggies. The smoky caramelized flavor of the chicken took it to a different level. The juicy and tender chicken, crunch from lettuce, sweet and sour flavors from the sauces used made it me wanting to eat a burger. If I am eating one it must have been really good. A quick lunch made in no time made this a clear winner.
 
 
 
My grilled chicken burger are perfect if you want something quick and delicious and in less time or maybe friends coming over and you want to serve them something filling yet very yummy. The chicken marinated in olive oil, lemon and seasonings does not over powers the flavors from the veggies and condiments used. This mildly spiced chicken is a perfect addition to your salad to make it a complete meal or maybe to any wraps, fried rice. I have used different layers to have that guessing game of flavors continue without even realizing that in no time your meal is done. Burger buns toasted a little, layered with sauce, cheese, lettuce, rucola, lots of tender and juicy chicken, pickled onions…(you will always find them in my kitchen Athena loves them a lot and likes them to
be served with her food whatever she is eating) and not to forget I added some olives as well. Once you have finished layering your burger you are left with a huge, mouthwatering burger absolutely difficult to resist with my favorite sauces flowing down from all sides. It was a little messy affair with my little ones but it was absolute worth. I was in no mood to eat a burger for lunch but after tasting it made myself one and enjoyed with some fresh salad. Trust me you will want to eat them again and again. I have added mint mayo, honey mustard and some hot sauce to balance out the sweetness from honey mustard…you can always go ahead and add any sauce of your choice. Burgers, fresh salad with some chilled Bacardi breezer.. pure bliss. You don’t need anything else.

Recipe follows below :
 
Ingredients:
 
·
Burger buns – 1 each
·
Shredded grilled chicken – (marinate chicken breast in olive oil, lemon juice, minced garlic clove, salt and pepper for 10 min after which grill till done)
·
Cheddar cheese slices 1 each
·
Pickled onions – use as required
·
Lettuce leaves
·
Rucola leaves for layering in between
·
A few sliced olives
·
Sauces used : Mint mayo, honey mustard and hot sauce
 
Directions:
 
1.    Grill the chicken and shred it into thin pieces.
2.    Cut the burger buns horizontally and toast till crisp.
3.    Spread some mint mayo on the bottom half of the bun,
4.    Add a cheese slice
5.    Add lettuce and a few rucola leaves.
6.    Add the chicken on the leaves.
7.    Spread some honey mustard and some hot sauce over
8.    Add some pickled onions and some olives
9.    Add a little mint mayo again.
10.  Finish with the other half of bun on top.
