Mixed Herbs Garlic Roasted Potatoes

These herbed & garlic roasted potatoes are a great side at your dinner table. Packed with flavor from herbs, garlic these potatoes are beautifully crisp on the outside and fork tender on the inside.

I kind of love potatoes, be it baked, fried, mashed or prepared in any possible way. So today it was hasselback baby potatoes with loads of garlic, herbs, lemon and served with cilantro chimichurri sauce. So good!!

A & A are finally done with their end of grades and very soon Athena will be having her graduation ceremony before the school closes for short summer break. After the school reopens my girl will start middle school, seriously how fast the time is flying by. But on the other side holidays also mean travel and I’m super excited about our upcoming road trip. We just love road trips and find all the excuse to travel. Taking unknown roads, driving all day, doing things at our leisure is just so much fun.

Now let’s talk about food. There would be rarely anyone who does not like potatoes. There is one such rare personality in my house who does not eat potatoes at all and I’m serious, my younger one never eats them. Potatoes are so versatile, cook them any way they are always good. You with me right??

So the story happens. I was in a mood to cook elaborate Indian dinner but that terrible headache kept me away from kitchen for most of the day. Now by evening I definitely wanted something quick yet delicious for dinner. These herbed & garlic roasted potatoes are just that. These hardly take any time for the initial prep and then after that all it takes is roasting in the oven. While the potatoes roast I’m gonna be making a quick spaghetti in olive oil, some roasted garlic and fresh green salad dressed in good quality extra virgin olive oil, lemon juice, some salt and freshly ground pepper.

 

The best part about these potatoes is they so easy to make. I’m gonna be serving them with chimichurri sauce. You can go ahead and use tzatziki sauce or a hot sauce if you prefer them spicy. They are freaking so good!!

Make them for a perfect and delicious weeknight meal or have your friends over on a Saturday night and whip up some good pasta, black bean burgers or a pizza maybe, some roasted veggies, salad and these delicious herbed n garlic roasted potatoes. Herbed & Garlic Roasted Potatoes

Herbed & garlic roasted potatoes are a great side at your dinner table. Packed with flavor from mixed herbs, garlic and parmesan, these potatoes are beautifully crisp on the outside and fork tender on the inside.

  • 1 pound baby potatoes
  • 1/4 cup olive oil
  • 2 tbsp butter melted
  • 1 tsp freshly ground black pepper
  • 5 cloves garlic minced
  • 1 tsp dried mixed herbs
  • 1 tsp chilli flakes
  • 1 lemon thinly sliced
  • 1/2 cup grated parmesan
  1. Preheat the oven to 425 F.

  2. In a bowl mix olive oil, butter, black pepper, salt, dried mixed herbs, minced garlic, red chilli flakes, lemon zest. Set aside.

  3. Wash, scrub the potatoes well and pat them dry. Hold the potatoes firmly on cutting board and slice them thin making sure to keep the bottom intact.

  4. Place the potatoes and sliced lemon on a baking sheet and generously rub the herb and oil mixture all over.

  5. Bake for about 20 minutes, take them out and pour the remaining herb mixture on the potatoes and place the baking sheet back in the oven.

  6. When the potatoes are almost done i.e. crisp on the edges and tender on the inside, sprinkle parmesan cheese and bake further for 10 minutes

  7. Serve hot with some chimichurri sauce.
