Overnight Oats Parfait

Overnight Oats in greek yogurt coconut milk with some plum sauce a great way to start your day. A delicious breakfast bowl with plum sauce roasted plums and nuts can be made ahead of breakfast and finished in just five minutes before serving. Give your family a healthy start to the day

 

Weekday breakfast is always a rush affair for me, everybody needs to get to work & school. I hardly get time to sit back and enjoy a cup of tea, so breakfast usually is quick one with cereals, oats or maybe eggs on some days. Oats are a staple breakfast in our house, we enjoy both the sweet and savory versions. Kids enjoy oats a lot in form of porridge while hubby is not a big eater of oats, he likes his eggs, poha, savory crepes. I came across this gorgeous looking recipe of overnight oats….i was not quite sure how it would taste and how kids would react to oats been used raw. Then I decided to give my own twist to the recipe to make it look more attractive and appealing on the breakfast table. It turned out delicious and can be made in no time…a perfect grab and go breakfast on a busy morning. I give my family a well balanced and healthy breakfast which is very important to start the day. There are a lot of health benefits of oats which I am sure you already know and I need not list it down here.
The same hot oats porridge at times gets boring but the overnight oats give you an opportunity to play with your imagination. Soak your oats in milk, yogurt or maybe coconut milk like I did…you can eat as it is or top with some fresh fruits, nuts, muesli or makea parfait out it. The best part is no cooking required here just soak them with anything of your choice and refrigerate them overnight covered….the next morning dress them with toppings of your choice. I used plum sauce here which
was again made a night before and kept refrigerated.
Imagine a jar of creamy oats soaked in yogurt and coconut milk…then served as a parfait using plum sauce, honey and cinnamon roasted fresh plums, ground flax seeds, almonds and dried cranberries. I added some muesli for that added crunch. That beautiful red color from plum sauce made the breakfast jar look so gorgeous and at the same time it was just too delicious to eat. If you like the tanginess from plums then this is for you. Oats, a whole grain cuts body fat and helps lose weight…slow releasing carbs keeps you full till lunch. I had posted Italian style savory oats sometime back on my Instagram account which i had topped with stir fried bell peppers, mushrooms and peas…Oh t was so delicious. We have started to enjoy oats more now.
You can too enjoy this delicious breakfast by following the recipe below. The ingredients used are for
per person.
Ingredients for oats
·        I cup oats
·         ½ cup Greek yogurt
·        ¾ cup coconut milk
·        1 tbsp honey
·        1 small banana chopped
·        1 tsp ground flax seeds
Other Ingredients
·        2 tbsp plum sauce
·        5 – 6 almonds chopped
·        3 dates seeded and chopped
·        1 tsp dried cranberries
·        A handful muesli
Ingredients for plum sauce
·        500 grams plums pitted and chopped
·        100 grams sugar
·        Juice of ½ lime
·        1 cup water
·        1 cinnamon stick
Ingredients for roasted plum
·        2 fresh plums, pitted and sliced
·        1 tbsp honey
·        1 /2 tsp cinnamon powder
Instructions for oats
·        In a bowl add yogurt, coconut milk, honey, chopped banana, oats and mix well. Keep covered in the refrigerator till required.
Instructions for plum sauce
·        In a sauce pan add sugar, lime juice, water and cinnamon, bring it to boil over high heat.
·       Once it comes to boil add plums and let it simmer for about 10 – 15 minutes till the plums become mushy and the sauce begins to thicken. Take it off heat.
·        Allow the sauce to cool and store in a container.
Instructions for roasted plum
·        Marinate the sliced plums with honey and cinnamon.
·        .Take a grill pan and roast them on both sides till slightly brown and make making sure not to make the mushy. For this the pan has to be really hot.
Assembling of the oats
·        Take a jar and spread some plum sauce, then add half the prepared oats. Over the oats sprinkle some chopped almonds, dates, cranberries and some museli.
·        Again layer some plum sauce over the nuts, then oats and then some almonds, dates, cranberries, muesli.
·        Now add some roasted plums and sprinkle some ground flax seeds.
·        Enjoy the healthy and delicious jar of oats.
