Pav Bhaji, the most celebrated and popular street food of India!!

Pav Bhaji is a delicious combination of different vegetables boiled, mashed and slow simmered and flavored with few fragrant spices to tantalize your taste buds. Served with butter laden grilled crusty pav or buns with a dash of lemon juice, chopped red onions and cilantro.

This particular dish has been a part of my growing up years, my dad would make finger licking good Pav Bhaji. I know I’m talking about him again but can’t help; there are so many beautiful memories which I love to share with you. This famous street food was then a family favorite and is now too with Athena & Arnav. And the good thing about this it is packed with all the goodness of the vegetables.

The vegetable all boiled and cooked with red onions, lots of tomatoes, ginger, garlic and few blend of spices. Finished with a dollop of butter and served with grilled butter laden brioche buns or dinner rolls. Street food doesn’t get better than this.

Pav Bhaji is our goto dinner at times. Whenever i’m in no mood to cook yet want something delicious it’s always Pav Bhaji to the rescue. It is just so good!!

Keeping the story short today. I had a marathon cooking session yesterday for a few friends. Cooked a few of famous Indian curries, baked Saffron Almond pound cake and then made that epic paan ice cream. Partied hard last night and pretty tired to write more.

Pav Bhaji – The Famous Indian Street Food

Pav Bhaji is a delicious mix of vegetables slow simmered with a few blend of spices. Served with grilled butter laden pav.

  • 2 1/2 cup Cauliflower
  • 1 large Capsicum
  • 1 cup Green Peas
  • 1 small Carrot
  • 3 medium Potatoes
  • 2 cups Water
  • 1 large Red Onion chopped fine
  • 5 large Tomatoes Chopped
  • 2 tbsp Ginger Garlic Green Chilli Paste
  • 1 tsp Cumin Seeds
  • 2 tsp Canola Oil
  • 3 tbsp Butter
  • 3 tbsp Pav Bhaji Masala
  • 2 tsp Kashmiri Red Chilli Powder
  • To Serve
  • Grilled Butter Laden Pavs or Dinner Rolls
  • Chopped Red Onions
  • Lemon Juice
  • Chopped Cilantro
  1. Let’s begin by pressure cooking the cauliflower, green peas, carrot, capsicum with water water until soft and mashable.

  2. Once the vegetables are cooked, drain the water, set aside and mash the veggies well. 

  3. Boil and mash the potatoes. Set aside

  4. Chop the onion and tomatoes fine. 

  5. In a heavy bottomed pan heat oil, 1 tbsp butter, add cumin seeds and let it splutter. 

  6. Add chopped onions and saute till translucent. Add the ginger garlic green chilli paste, saute till raw smell disappears and the mixture is cooked well.

  7. Add the chopped tomatoes, sprinkle kashmiri red chilli powder, pav bhaji masala and salt. Cook till the oil begins to leave sides of pan.

  8. Add the mashed potatoes, mix well.

  9. Add the mashed vegetables and give a good mix. Now add the reserved water and bring to boil. 

  10. Using a masher mash everything well and let it simmer for 10 – 15 minutes. Add more water if required to get the desired consistency. 

  11. Add the remaining butter and cook further for 5 minutes. Adjust seasoning. 

  12. Serve hot sprinkled with chopped onions, a squeeze of lime, cilantro along with grilled butter laden pavs or dinner rolls.
