“Welcome to The Apron Trail“, an effort to take you to the culinary trails of India.

Let’s travel to AWADH and experience the royal cuisine with delicate flavors, the methods of slow cooking and the use of exotic spices. The Awadhi Cuisine truly reflects the grand and sophisticated Nawabi way of life. The cuisine that is native to the region of Awadh, presently known as Lucknow holds pride in the world of gastronomy.

A quick travel back in time – it is believed when the downfall of Mughal empire started in 18th century, Nawab Asaf-Ud-Daulah moved his base from Faizabad to Lucknow and began to revive poetry, art, culture and its cuisine. The techniques of char-grilling, dum pukht (slow cooking over low heat), developed and created a refined food culture. Later when the British rule started to dominate and take over the kingdom, the Nawab stood strong and the legacy continued. The art wok, historic buildings and it’s cuisine perished and continues to live on until today. From delectable kebabs, delicate Biryani, breads and heavenly kulfi, you name it and Awadhi cuisine has it all.
