Strawberry and Chocolate Chips Muffin

I’m not much into baking, made a first attempt few days back to bake muffins but it was a total disaster. My muffins did not rise much, were dry, crumbly L after which I decided not to bake again. But I not a kind of person who would give up easily, baked them again today and that too for a weekday breakfast…as my muffins were baking away in the oven the aroma filled my house, kids and VK getting impatient to eat them but I was kind of very scared of the end result. And this time we have on our breakfast table this pretty little thing which was very yummy, moist from inside and full of flavor flavors. I am so so very happy with it. Athena and Arnav thoroughly enjoyed them and took them to school as well; VK too enjoyed it though he does not enjoy baked goodies too much. I am very satisfied and happy with my bake today…this has encouraged me to bake more now. Loving it J Well, well chocolate pudding on valentines and these yummy muffins today….sugar again…oh, how can I give up my no sugar resolution…I will not.

I cannot stop myself from thinking about these beautiful and yummy baked goodies. These tender, moist muffins with lots of juicy strawberries and gorgeous chocolate chips will surely win over anyone. Make these gorgeous muffins for your beautiful family by following the recipe below:
Ingredients
- 2 cups All purpose flour
- ¾ th cup granulated sugar
- 1 cup chopped strawberries
- 2 teaspoon baking powder
- 1 teaspoon freshly ground cinnamon
- 1 egg
- ½ cup melted butter
- 2 tablespoon yogurt
- 1 teaspoon vanilla extract
- ¾ th cup dark chocolate chips
- 2 tablespoon brown sugar for topping
Method
- Preheat the oven to 180 degrees C (350 degrees F). Lightly grease the muffin pan or line them with paper liners which ever you prefer.
- In a large mixing bowl, combine 2 cups flour, sugar, baking powder, cinnamon, strawberries, chocolate chips and whisk to combine.
- In another medium bowl, combine eggs, yogurt, butter, vanilla essence and whisk to combine.
- Slowly pour the wet ingredients mixture to the dry ingredients mixture and stir lightly until until just incorporated. Batter should be really thick and is ok if lumps are there. Please do not over mix.
- Fill each cavity of the prepared muffin pan till ¾ th full.
- Bake for 20 – 25 minutes or until fluffy, mine took 25 minutes. Once done insert a toothpick in the centre if should come out clean, if not then bake for few more minutes till done.
- Allow to cool for about 10 -15 minutes before removing from muffin pan.
- Enjoy your freshly baked goodies. Best consumed fresh otherwise can be stored in
airtight container for about 4 – 5 days.
