Sumac Spiced Chicken Crepes with Tahini Yogurt Sauce
Chicken and peppers spiced with Sumac, filled in thin n gorgeous crepes and served with Tahini Yogurt Sauce.
To be honest with you I was never a crepe or a waffle person until I discovered good ones but i’ve always enjoyed pancakes. When I tried waffle for the first time I simply hated it with a decision never to try them again. But then during one of our holidays in Radisson Blu, Goa the Chef there whipped up some really good crepes stuffed with creamy mushrooms and some sweeter version as well. It was from there started my love for crepes.
Crepes are really simply to put together and require the following very basic pantry staples
1) Flour (I have used spelt here but you can always go ahead with all purpose, whole wheat, buckwheat or anything you prefer)
2) Eggs
3) Milk
Simply whisk the ingredients together and there you have the batter ready. Now we have to let the batter rest for minimum 1 hour which is important, during the resting time the starch molecules in the flour absorb more liquid and air bubbles slowly work their way out give a much smoother crepe.
Now the filling options are endless, make them savory or sweet both ways work great. Use any fruit, veggies, peanut butter, jam, maple syrup, and mushrooms with creamy sauces to fill up those soft crepes. But our personal preference is savory and here I’ve used chicken and bell peppers spiced with Sumac (one of the widely used spice in Middle Eastern & Mediterranean region). Here I’ve let the chicken marinate with yogurt, sumac, garlic and few basic spices overnight to get one delicious filling. I have used this filling in my wraps as well, works great.
And for the sauce, well for everything there has to be a sauce, isn’t?? We have Tahini yogurt sauce flavored with roasted garlic that comes together in no time. This one is my go to sauce whenever there is Mediterranean food on the menu.
Because I’m a little obsessed with crepes these days and these Middle Eastern flavored crepes made one gorgeous dinner. And a glass of red wine of course to compliment. This one is definitely is my kind of meal.
But you can always have them for lunch or maybe brunch, anyways you decide.

Sumac Spiced Chicken Crepes With Tahini Yogurt Sauce
Gorgeous Crepes stuffed with delicious filling of sumac spiced chicken and served with Tahini Yogurt sauce.
- 1 cup White Spelt Flour
- 1 cup Milk at room temperature
- 1/2 cup Water at room temperature
- 1/4 tsp Salt
- 2 tbsp Butter (melted)
- 3 Eggs
- 2 Chicken Breasts cut into small pieces
- 1/4 cup Thick yogurt
- 1 tbsp Sumac Spice
- 1 tsp Garlic Paste
- 1/4 tsp Red Chilli Powder
- 1 tsp Salt or to taste
- 1 cup Low Fat Yogurt
- 2 tbsp Tahini
- 2 tbsp Lemon Juice
- 3 cloves Roasted Garlic Chopped
- 1/4 tsp Black Pepper
- 1/2 tsp Salt or to taste
- 1/2 cup Pickled Onion

For Chicken :
Cut the chicken breasts into 1 inch pieces and wash well. In a bowl add yogurt, lemon juice, salt, pepper, sumac, garlic paste, chicken & sliced peppers, mix well cover and refrigerate for minimum 2 hours or overnight. longer the better.

Heat a little oil in a pan, add the marinated chicken and cook on high till done. Takes about 5 – 6 minutes. Set aside.

For Crepes :
Whisk together flour and salt in a small bowl.

In a large bowl whisk together eggs, milk and water, mix till well blended. Gradually add the dry ingredients and mix well. Add the melted butter and mix well, the batter will be thin. Strain the batter to remove any lumps and set aside for 1 hour.

Heat a cast iron griddle, add little butter to coat.

Pour about 1/3 cup of the batter and very quickly swirl the pan to spread the batter evenly, cook for 30 seconds to a minute then flip and cook further for 20 seconds.

Remove and transfer to a plate. Continue till all the batter is used up. Makes 10 crepes.

For Tahini Yogurt Sauce :
Place low fat yogurt, tahini, roasted garlic, salt, pepper and lemon juice in a bowl, whisk till well combined. Adjust seasoning.

Plating the crepes :
Take a crepe, spoon some chicken, some pickled onions, drizzle tahini yogurt sauce and fold into a triangle. Top with more sauce if needed. Serve.
